A pancake mix that pulls its weight

Most pancake mixes are flour and sugar. This one is built on lupin flour, flax meal and rice protein, so a 35g serve of the dry mix brings 9.9g of protein with only 4.3g of carbohydrate and 1.4g of sugars — a lighter, protein-forward base than a standard white-flour stack.

Sweetened without refined sugar. Erythritol does the sweetening, with cinnamon and natural vanilla flavour for taste, so there is no refined or cane sugar added to the mix. The 1.4g of sugars per serve is what occurs naturally in the ingredients.

Built to be easy. One level scoop, one egg (or a vegan alternative), a splash of your milk of choice, then a five-minute rest while the mix activates. Cook about a minute each side for pancakes, or pour it into a waffle maker.

Top with Greek yoghurt and berries, or your own favourites, for a quick breakfast or a higher-protein twist on weekend pancakes.

FAQ

How do I make the pancakes?

Put one level scoop (35g) of mix in a bowl, add 1 egg (or a vegan alternative) and 50ml of your milk of choice, then leave it to activate for 5 minutes. Lightly grease a pan on medium-high heat and cook the pancakes about a minute on each side until cooked through.

How much protein is in the pancake mix?

The dry mix provides 9.9g of protein per 35g serve, which makes it a source of protein. The protein comes from lupin flour, flax meal and rice protein. Adding an egg and milk per the directions increases the protein in the finished pancakes beyond what is in the mix alone.

Is it gluten-free, and is there any refined sugar?

It is a gluten-free recipe — there are no gluten-containing ingredients in the mix. There is no refined or cane sugar added; it is sweetened with erythritol, with cinnamon and natural vanilla flavour. The 1.4g of sugars per serve is what occurs naturally in the ingredients.

Can I make it vegan or dairy-free?

The dry mix itself is plant-based. To keep the finished pancakes vegan and dairy-free, use a vegan egg alternative in place of the egg and a plant milk such as oat, almond or soy as your milk of choice. The mix works the same way either method.

Does it contain any allergens?

Yes. The mix contains Lupin and Tree Nuts (almond meal), and lupin flour is the main ingredient. It is not suitable for anyone with a lupin, legume or tree-nut allergy. The product is made in New Zealand from local and imported ingredients.

Can I make waffles with it?

Yes. Prepare the mix the same way — one scoop, an egg or vegan alternative, and 50ml of milk, rested for 5 minutes — then cook it in a waffle maker following the maker's standard directions. Let the waffles cool slightly before adding your favourite toppings.

How many serves are in a pack?

Each 500g pack contains 13 serves, with a serving size of 35g (one level scoop) of dry mix. How many pancakes that makes depends on the size you cook; spooning smaller rounds gives you more pancakes per serve. Store the pack in a cool, dry place.

About these numbers

  1. Nutrition values: manufacturer's on-pack panel for the dry mix as sold (per 35g serve and per 100g). Adding egg and milk per the directions changes the values of the finished pancakes.
  2. "Source of protein" reflects 9.9g of protein per 35g serve. Values may vary slightly on reformulation; check the on-pack panel.
